A tasty frozen treat that combines the sweet taste of strawberries with the richness of cream to make a delightful semifreddo.
Ingredients:
- 500g strawberries, hulled, thinly sliced
- cup caster sugar
- 2 tbsp lemon juice
- 300ml thickened cream
- 200g condensed milk
- 1 tsp vanilla extract
Instructions:
Combine strawberries, cup sugar, and lemon juice in a bowl
Set aside for 30 minutes
Using an electric mixer, whisk cream, condensed milk, vanilla, and remaining sugar until soft peaks form
Fold half of the strawberries into the cream mixture
Line a 6-cup capacity loaf pan with plastic wrap, leaving overhang
Spoon half of the cream mixture into the pan
Top with remaining strawberries
Spoon over remaining cream mixture
Smooth the surface
Cover with overhanging plastic wrap
Freeze overnight or until firm
Serve sliced with extra strawberries
