Ingredients:
- 1 whole chicken about 4-5 pounds
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 lemon, halved
- 4 cloves garlic, minced
- 1 onion, quartered
Instructions:
Preheat oven to 425F 220C
Rinse the chicken inside and out under cold water
Pat dry with paper towels
In a small bowl, mix together olive oil, salt, pepper, paprika, thyme, and garlic powder to create a spice rub
Rub the spice mixture all over the chicken, including inside the cavity
Place lemon halves, minced garlic, and quartered onion inside the cavity of the chicken
Tie the legs together with kitchen twine, if desired
Place the chicken on a roasting rack in a roasting pan breast side up
Roast the chicken in the preheated oven for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165F 75C when tested with a meat thermometer inserted into the thickest part of the thigh without touching the bone
Remove the chicken from the oven and let it rest for 10-15 minutes before carving
