30 Min Cajun Chicken & Rice



This 30-minute Cajun chicken and rice recipe is a healthy and flavorful one-pan meal that's perfect for busy weeknights. Packed with protein, veggies, and Cajun spices, it's sure to be a family favorite!

Ingredients:

  • 1 lb chicken breast, diced
  • 1 tbsp olive oil
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long grain rice
  • 2 cups chicken broth
  • 1 can diced tomatoes, drained
  • 2 tsp Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

In a large skillet, heat olive oil over medium-high heat

Add chicken and cook until browned, about 5 minutes

Add bell pepper, onion, and garlic, cook until softened, about 3 minutes

Stir in rice, chicken broth, diced tomatoes, Cajun seasoning, salt, and pepper

Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and liquid is absorbed

Garnish with fresh parsley before serving
