Ingredients:
- 1 ripe persimmon, peeled and chopped
- 1/2 cup raw cashews, soaked and drained
- 1 banana
- 1 cup almond milk
- 1 tablespoon honey or maple syrup optional
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- Ice cubes optional
- Fresh mint leaves for garnish optional
Instructions:
Soak the cashews, put the banana, almond milk, honey or maple syrup if using, vanilla extract, and ground cinnamon in a bowl
Then add the chopped persimmon to the blender
Mix until it's creamy and smooth
You can add ice cubes and blend again until they are well mixed in if you want a colder smoothie
If you think the smoothie is too sweet or too thick, you can add more honey, maple syrup, or almond milk
