This comforting and healthy potato stew with soy curls and vegetables is full of different tastes and textures.
Ingredients:
- 2 cups soy curls
- 4 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced
- 4 potatoes, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 cup frozen peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Take soy curls and soak them in warm water in a bowl for 10 minutes
Then, drain them
Put olive oil in a big pot and heat it over medium-low heat
Put in the garlic and onion, and cook until the onion is clear
Put in the carrots, potatoes, and celery
Bring it to a boil
Add the soaked soy curls, thyme, rosemary, salt, and pepper, then pour in the vegetable broth
Bring to a boil, then lower the heat and let it cook for 20 minutes, until the potatoes are soft
After you add the frozen peas, cook for 5 more minutes
If necessary, change the seasoning
