Pulled Pork and Cornbread Shooters



These Pulled Pork and Cornbread Shooters are a delightful combination of smoky pulled pork and cheesy cornbread, perfect for a party or barbecue gathering. The mini size makes them easy to enjoy as appetizers or snacks.

Ingredients:

  • 3 lbs pork shoulder, boneless
  • 1 cup barbecue sauce
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped green onions for garnish

Instructions:

Add garlic powder, onion powder, black pepper, and salt to the pork shoulder and rub it all over

In a slow cooker, put the pork shoulder that has been seasoned

Cook on low for 8 hours, or until the meat is soft

Use forks to shred the cooked pork, then mix it with barbecue sauce

Warm up the oven to 400F 200C and grease a mini muffin tin for the cornbread shooters

Put cornmeal, flour, sugar, baking powder, and baking soda in a bowl and mix them together

Mix buttermilk, eggs, and melted butter together in a different bowl

Add the wet ingredients to the dry ones and mix them together just until they are mixed

Add the shreds of cheddar cheese

Place the cornbread batter into the mini muffin tin

Bake for 12 to 15 minutes, or until the tops are golden brown

Before taking the cornbread shooters out of the tin, let them cool a bit

To put it together, put some pulled pork on top of each cornbread shooter

Add chopped green onions as a garnish and serve right away

Smoked Bacon Cheese Garlic Bread



Savor the mouthwatering aromas of this wood pellet grill or smoker-cooked French bread infused with bacon, cheese, and garlic.

Ingredients:

  • 1 loaf of French bread
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked and crumbled bacon
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions:

Preheat your wood pellet grill or smoker to 225F 107C

Slice the French bread in half lengthwise, creating two long pieces

In a bowl, mix together the softened butter and minced garlic

Spread this mixture evenly over the cut sides of the bread

Sprinkle the shredded cheddar and mozzarella cheese over the garlic buttered bread

Evenly distribute the cooked and crumbled bacon over the cheese layer

Place the bread on the grill grates of the preheated smoker and smoke for 20-25 minutes or until the cheese is melted and bubbly, and the bread is toasted

Carefully remove the smoked bacon cheese garlic bread from the smoker

Sprinkle chopped fresh parsley over the top, and season with salt and black pepper to taste

Slice into individual portions and serve warm

Spicy Butternut Squash Wrap with Pumpkin Seed Sauce

  • 1 medium butternut squash, peeled, seeded, and cut into thin strips
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/2 cup pumpkin seeds
  • 1/4 cup fresh cilantro leaves
  • 4 large whole wheat tortillas
  • 1/2 cup Greek yogurt
  • 2 tablespoons lime juice

  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon paprika

Instructions:

Start by heating the oven to 400F 200C

Add the butternut squash strips to a large bowl and mix them with the chili powder, cayenne pepper, salt, and pepper

Do this until the squash strips are well covered

Spread the butternut squash out in a single layer on a baking sheet

Season it and roast it for 20 to 25 minutes, stirring it once halfway through, until it's soft and slightly crispy

Spice up the pumpkin seeds in a dry skillet over medium-low heat until they begin to pop and turn golden brown

Do this while the squash roasts

Take them off the heat and set them aside

Put the toasted pumpkin seeds, cilantro, Greek yogurt, lime juice, minced garlic, honey, ground cumin, paprika, and red pepper flakes if you want in a blender or food processor

Mix the ingredients together until the sauce is smooth

If you need to, add water to thin it out

Add pepper and salt to taste

Put the wraps together once the butternut squash is ready

You can warm the whole wheat tortillas up for a short time in the oven or on a skillet

On each tortilla, put a large spoonful of the pumpkin seed sauce

Put the sliced red onion, baby spinach leaves, and roasted butternut squash strips on top

Make a wrap by folding the tortilla's sides in and rolling it up tight

You can dip your spicy butternut squash wraps in extra sauce that you can find on the side

Ingredients:

  • 2 cups soy curls
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 potatoes, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tsp ground cardamom
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup milk
  • 1 packet 2 1/4 tsp active dry yeast
  • 1 egg
  • 1/4 cup raisins optional
  • 1/4 cup chopped almonds optional
  • Powdered sugar, for dusting optional

Instructions:

Warm the milk in a small saucepan over low heat until it's just barely warm, about 110F or 43C

Take it off the heat and add the active dry yeast

Wait about five minutes until it foams up

Softened butter, sugar, and ground cardamom should all be mixed together in a large bowl

Mix until it's smooth

Mix the yeast mixture and egg together in the bowl until everything is well mixed

Add the flour and salt little by little and mix until a soft dough forms

Add the chopped almonds and raisins to the dough after you've made it

Let the dough rise in a warm place for about an hour, or until it has doubled in size

Cover the bowl with a clean kitchen towel

Warm your oven up to 375 F 190 C and put paper liners in a muffin tin

Cut the dough into 12 equal pieces, and roll each piece into a ball

Get a muffin cup and put each ball in it

After the oven is hot, bake the muffins for 15 to 18 minutes, or until they are golden brown and when you tap them on the bottom, they sound hollow

Take the muffins out of the oven and set them on a wire rack to cool down a bit

Before serving, you can sprinkle powdered sugar on top of the muffins if you want to
